Bloody Marvelous
In the neighborhood competition over Super Bowl Brunch spreads, no less internecine for its being undeclared, the Overts down the way, with their built-ins and square footage, routinely win on looks. Yet would it be possible, Chef Rich wondered, eyeing the fists full of Bloody Marys garnished with beef jerky, to revitalize the sadly debased Mary and restore her piquant, curative meal-in-a-glass savoir-faire? Locking himself in the Sage test kitchen with his minions and a bushel of ripe market produce, Rich created a relish of hickory-smoked Roma tomatoes, pickled red onion, cucumber and fresh dill, and emerged with the Sage Bloody Mary. Shaken with Stoli and poured over ice in a salt-rimmed bucket glass with a squeeze of lime, pickled green bean and olives, this is the Mary that will sharpen your senses, quicken your mind, and invigorate your play calling. This thing is yours to lose!

Artisan Dinner now
Sunday Feb. 19
Graffiti, Cheddar, and Romanesco cauliflower, among other specialty produce from Weiser Family Farms, will be featured at the Sage on the Coast Artisan Dinner, moved to a less distracted Sunday when we can sip the chards and pinots created by Joe Davis of Arcadian Winery without worrying about the point spread.

Tranquility Base
There’s a reason we call it Sage. Having cleansed brunch of its troubled past--its shuffling queues, sneeze-guards, godawful bubbly, strolling divas, yammering pianos, melting ice sculptures and inevitable prix fixe-incentive to over-sample the teetering mounds of mediocrity—you can finally enjoy your omelet and glass of wine in peace. Plant yourself next to the roses and gardenias on the patio in Eastbluff, or near the fire at the Coast, with your still unravished glossy magazine, your wild mushroom, leek and asiago omelet, your glass of pinot gris. You don’t have to build-your-own anything. Should you desire an indulgence, perhaps the coffee ice cream-topped, banana-stuffed brioche French toast? Avez-vous faim? Then the open-faced ribeye steak sandwich with gorgonzola sauce, arugula, tomatoes and pickled onions. The  breeze stirs. Is that orange blossom in the air? Mais oui. Already spring? Perhaps another glass.

Valentines
It’s a magical week of high expectations and fraught with peril. No, not Torino. If you haven’t already booked your suite at the Bellagio (miss you!) consider the sweet and low-key approach: a stroll on the beach at Crystal Cove, or arm in arm across the greensward in Eastbluff, and a cozy, romantic dinner at Sage. The trees will twinkle with their ruby lights all weekend long, and we won’t sting you with a ponderous procession of courses or inflated pricing. Chefs Rich and Kris will offer only the most tantalizing and original cuisine to go with your striking choice of wine (Heidi Barrett’s dry Muscat? Well played!), plus extravagant chocolate should you choose to linger. Of course, all of it can be packed to take away should you want to dash back to your en suite hot tub. Cara mia!

Libertines
Desperate for variety? Unable to commit? Well, since you’re probably not doing much for Valentine’s Day you might as well try Small Plate Mondays at Eastbluff, when a tasting menu circulates at the bar among others of your ilk. Some dishes have all the choice ingredients, thoughtful preparation and gorgeous presentation of a full-size entrée, but fleeting, like the hoisin glazed Copper River salmon with miso risotto (too late) or the panko crusted chicken pallaird with winter chanterelles and garlic cream sauce (gone). What else? Tiny burgers. Wee linguini with Manila clams. A sea scallop with Asian noodle salad. The menu is always changing, responding to suggestion and inspiration, arousing bedevilment and surprise. Stimulating and fun. We were just having fun, right?
